- The Parmigiano Reggiano Consortium(Consorzio del Formaggio Parmigiano Reggiano), the body that enforces the disciplinare — the written production rulebook covering permitted feed, the two-milking method, minimum aging, and the tap-test inspection (battitura) before branding.
- UNESCO's Creative City of Gastronomydesignation for Parma, used only for the specific 2015 fact it documents.
- General reference sources (e.g. Wikipedia) used only for background geography and history, never for production-process specifics, which come from the Consortium and disciplinare directly.
How we verify tour-specific details
